I’m ѕο excited, bυt nοt lіkе mу husband іѕ tickled. I want tο υѕе a difficulty Canner, bυt I’ve heard horror tаlеѕ аnd I even know someone whο wаѕ injured. Arе thеу really thаt реrіlουѕ? Whісh іѕ a ехсеllеnt аnd whаt I need tο know іn buying one. Am I јυѕt thе same ancient method, a water bath Canner Stick? Best аnѕwеr:

I grow about 16 tomatoe plants a year. My wife cans about 35 -40 quarts. Up until last year she used a “regular canner, then switched to a pressure on. The pressure one scares me to death. She did have 1 accident and scalded her arm a little.

In my opinion, “better safe than sorry”. Use the cold pack method.

My wife and I have canned vegetables for about 20 years. Since we like tomatoes best, we can those mostly. We usually can about 50 to 60 quarts a year and give some away. Pressure canners are safe used correctly. The new ones, like Mirror brand with the pressure weight on top that juggles to let steam out are almost foolproof. Just check the stem that the weight rests upon to make sure it is not clogged before using. The steam will escape when the correct pressure is reached. While you are at it, try some tomato relish. You don’t need a pressure canner for tomatoes. Beans, peas, etc. are a different story.
